Itty Bitty Falafel Burgers

I went Trader Joe's earlier this week and found mini pitas. They were too cute to pass up and I figured they would be great for dipping in hummus.

Tonight we made some hummus, falafel and tabouli for dinner.

I'm happy to say the mini pitas worked perfectly. It was almost like eating mini burgers. It was a quick and easy dinner, with plenty of leftovers for lunch tomorrow.

And right this second I have a huge batch of macaroons in the dehydrator.

Why?

Well Eric and I are participating in the Great American Bake Sale.



The bake sale is to raise money for Share Our Strength, a national organization fighting to end childhood hunger in the United States.
There are going to be a lot of goodies for sale, and Eric and I are donating vegan/raw macaroons and vegan oatmeal chocolate chip cookies.
The bake sale will take place Saturday, April 17th at A Full Plate (1009 N. Bodine St Philadelphia, PA 19123). So try to come out and purchase some baked goods!

I made tabbouleh this week, too! Been eating it for lunch every day. yum. :)
