happy halloween cont.
we finally got around to carving our pumpkins last night, but couldn't even put them outside because of the rain.
and here are the peanut butter cups i made yesterday.
they were kind of a pain to make, but taste exactly like reese's peanut butter cups. i ran out of chocolate so i couldn't completely cover the tops.
to make peanut butter cups melt down about a cup of chocolate chips in the microwave, stirring every 30 seconds. once the chocolate is mixed use a spoon to cover the inside of the paper mini muffin cups then place into the mini muffin tins. then let it cool completely, you can put it in the refrigerator to speed up the process.
to make the peanut butter filling combine 1/2 cup creamy peanut butter, 1/4 cup powdered sugar, and a splash of vanilla. microwave it till you have a creamy texture. then scoop peanut butter into the mini muffin tins and let that cool down completely.
after the peanut butter has cooled melt down more chocolate and scoop over the top of the peanut butter. and then let cool down again.
once cool ENJOY.
halloween night was fun and not too crazy. i loved our costumes. we went as a double dare team!
and now we are spending the rest of the day getting ready for the work week.

running out of chocolate when you're making PB cups is actually awesome because vegan chocolate doesn't spread as thinly as chocolate with milk in it. sometimes i use too much chocolate they're hard to bite in to and the peanut butter spills out the sides.
either way; DELICIOUS!!!
ooh that's interesting and totally makes sense! i figured out i kind of like just a little bit of chocolate on top anyways, so it worked out in the end.
