meal planning

moving in together was not a big adjustment, but we definitely had to get used to each others schedules and habits. it wasn't hard in the beginning because unemployment gave me flexibility and if something needed to be done, i had the time.
but now that we are both working we are having to readjust and work together.

one thing we are testing out is meal planning. i am hoping it makes everything a little bit easier, grocery shopping, having more creative and interesting dinners, planning for leftovers, etc.

right now i have all of our nightly meals on my google calendar, which eric has access too. we email a lot during the day, so any questions or suggestions are easily answered and the menu is adjusted. it helps a lot because eric gets home from work and starts prepping dinner, and when i get home we can immediately start cooking.

i really hope we keep this up, or atleast have a few meals planned each week. it seems to make everything go a lot smoother and helps us have stress-free dinners.

The new lady of the household.

So as Lauren had said I took trip to Virgina on Sunday and I was going to make a post yesterday but it was a long day.

I got to 30th st station at about 7:20am and took the train down to Richmond, VA. I kept myself busy on the train reading the rest of the Thrive Diet, sleeping, and listing to some podcast Lauren put on my ipod entitled "Wait Wait... Don't Tell Me! "

I figured out I was going to take this trip a few days before but for some reason I went pretty unprepared. I didn't eat before I left and I didn't bring much to eat the rest of the way... I also didn't bring any maps but figured worst case I could call Lauren. I took rt-301 home instead of I-95 for a scenic drive (sorry about the cell phone picture.)

I ended up getting back Sunday night with my new car around dinner time, ate and called it a night. Got home today and shot a few pictures for those that are interested. She'll be occasionally driven, but most days I will be on the bike. I have a lot planned but not sure what direction the car will be heading in yet.

bits of the weekend

a busy but boring one.

we went to new jersey to watch people ride bikes.

on sunday eric took the train to virginia. he is going to do a post later on why he went to virginia.
it was nice having the day to myself. eric is the first "roommate" i've ever had, after years of living alone. sometimes it's nice to be alone again.

new job

so i started the new job this week. it's um interesting? honestly right now i am overwhelmed. the job deals with a lot of database stuff so i am trying to figure all of that out and remember everything that you are supposed to do with every single book.

but! i have my own office, which is a plus. and it has windows so i can see the pretty leaves outside.

i was worried about being able to get time off for thanksgiving and christmas, because i don't have any time off this year, but i already have tickets to texas, but it seems like it shouldn't be a problem.

happy halloween cont.

happy halloween!
we finally got around to carving our pumpkins last night, but couldn't even put them outside because of the rain.

and here are the peanut butter cups i made yesterday.

they were kind of a pain to make, but taste exactly like reese's peanut butter cups. i ran out of chocolate so i couldn't completely cover the tops.
to make peanut butter cups melt down about a cup of chocolate chips in the microwave, stirring every 30 seconds. once the chocolate is mixed use a spoon to cover the inside of the paper mini muffin cups then place into the mini muffin tins. then let it cool completely, you can put it in the refrigerator to speed up the process.
to make the peanut butter filling combine 1/2 cup creamy peanut butter, 1/4 cup powdered sugar, and a splash of vanilla. microwave it till you have a creamy texture. then scoop peanut butter into the mini muffin tins and let that cool down completely.
after the peanut butter has cooled melt down more chocolate and scoop over the top of the peanut butter. and then let cool down again.
once cool ENJOY.

halloween night was fun and not too crazy. i loved our costumes. we went as a double dare team!
