I was starting to accumulate a bunch of food photos, so I figured I would throw them all together in a single post.
Last night Eric made burritos. I guess you could say they were in honor of Cinco de Mayo, but I was sick and really just wanted a burrito to eat.
We filled them up with cashew cheese, spanish rice, tempeh, sweet potatoes, chickpeas, onions and peppers. All wrapped up in an Ezekiel tortilla.
After the Broad Street Run last Sunday, we went to Memphis Taproom. Not gonna lie, in those last few miles of the race all I could think about was how good this burger was going to taste.
Memphis makes an amazing veggie burger, and Eric and I always add on smoked coconut. Smoked coconut might be the most amazing thing ever. I then smother my burger in beer mustard. It really was everything I imagined.
The night before the run I "carbo-loaded" with pizza. Or my version of pizza. See I always hated pizza growing up. Even before I officially went vegan I hated cheese. I remember trying to eat a few slices at random birthday parties as a child, but just couldn't do it (same thing with soda).
But I have been working on making a Lauren pizza. The crust was smothered in cashew cheese, then I put some kale, chickpeas, sweet potatoes, peppers and onions, and then topped with more cashew cheese. It was glorious.
And finally, a few weeks ago we made the chickpea cutlets from Veganomicon. Eric didn't think I would like them, but surprisingly I did. Can't wait to make these again.

i love memphis taproom's veggie burgers, but i can never eat the whole bun! i should order it without the bun. :P
I think Sunday was the first time I have ever eaten the entire burger! I usually have to cut it in half.
*note* you didn't eat the entire burger, I helped you finish a bit ;)

Now that is pizza. Why can't all pizza look like that?
