ok...don't ask why they are green. i really have no idea. they are supposed to be red velvet cupcakes but i was out of red, and figured green would look nice. i plan to make them over christmas, sans food coloring...what would they be called then? velvet cupcakes?
make them whatever color you want, but i highly suggest you make them. they are yummy.
Cake
2 cups soy milk
2 teaspoons apple cider vinegar
2 ½ cups all-purpose flour
2 cups sugar
4 tablespoons cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2/3 cup vegetable oil
2 ounces food coloring (if you choose)
4 teaspoons vanilla extract
in a medium sized bowl add the apple cider vinegar to the soymilk and set it aside, letting it curdle.
in a large bowl whisk together flour, sugar, cocoa powder, baking powder, baking soda and salt.
add the oil, food coloring if you wish, and vanilla extra to the curdled soymilk and stir.
pour liquid ingredients into dry ingredients and stir.
fill cupcake liners and bake in a preheated over at 350 degrees for about 20 minutes.
(i always check baked goods 5 minutes before they are supposed to be done)
frosting
1/4 cup room temperature earth balance
1/4 cup room temperature tofutti better than cream cheese
1 teaspoon vanilla extract
1 and 1/4 cup powdered sugar
cream the earth balance, cream cheese and vanilla extract.
slowly add the powdered sugar into the creamed sugar and beat until smooth.
frost cool cupcakes

I rather like the idea of green velvet instead of red velvet. Green is nicee. :)
