friday morning i woke up and the first thing i did was take kitta marie to the vet. she definitely had a UTI and bladder stones (again!) so she got a shot, and some pills and we have completely changed her diet. she seems to be doing better.
eric and i decided to not going to ocean city that day, and just watch her and make sure she was ok.
once eric got home from work we went to a bar across the street from our apartment for happy hour.
then we rode our bikes into center city to meet up with people and go to dinner and to a bar.
juli had taken the bus but eric decided to give her a ride back.
everyone in amsterdam rode bikes around like this and it made me kind of jealous. i wish more people did it here. so we jumped at the opportunity to give it a try and it worked out quite well.
this is really my only photo from saturday. eric was awesome and cooked me pancakes for breakfast.
we ended up catching a ride to ocean city, which was about 3 hours away. sadly it was cold and rainy when we got there.
sunday morning we woke up to go to the car show. it was raining when we got there, but it ended up being a pretty nice day.
VW was handing out stickers with numbers on it, and you had to find someone with your same number and you got a prize. eric found his match. i never found mine.
i was kind of having a crappy weekend because i was worried about kitta, the weather had been gross, i was at some car show were i knew no one, but then eric told me they had potato ribbons and it made everything so much better. i got a large order of potato ribbons and fries and it was amazing.
we got home early evening and did our grocery shopping and hung out around the apartment. i got in bed to read and both of the cats joined me. THIS WAS AMAZING. the cats hate being near each other.
i think eric might actually make a post this week! he made some food last week that he is pretty proud about and i am trying to get him to post about it.

kitta marie has another UTI. i just hope it doesn't turn into bladder stones like last time. luckily i am more prepared this time and i already have a urine sample and i am taking her to the vet this afternoon.
eric and i had plans to go to ocean city, md for the weekend, but who knows now.

bits of the weekend
well friday night we did nothing. eric took a 3 hour nap after dinner and didn't wake up till after 11 pm. by that time i was ready to go to sleep so we just called it a night. oh and i also somehow got pink eye and my eye hurt all day.
we woke up early on saturday and rode our bikes to fairmount park. i went running and eric continued riding his bike.
i've been sort of training for a half marathon, only to find out it's already sold out. bummer.
we were both kind of tired the rest of the day and just hung out.
our plans for the evening were to watch the texas tech v. ut game, so we decided to have pizza for dinner.
the game was a little boring, especially compared to last year!
eric baked some oatmeal chocolate chip cookies.
side note, we found this giant tub of earth balance and it's the best thing ever.
sunday morning was laazy. the cats and i hung out together in bed for a while.
and then we finally got to work on some house stuff we had been meaning to do. we took apart the old broken dresser, hung curtains, slightly rearranged our bedroom and completely rearranged our living room, only to put it back to almost how it used to be.
after a trip to the grocery we got to prepping dinner and food for the week.
eric made pasta.
and i made cornbread.
and not to toot my own horn, but i think this is some of the best cornbread i have ever had.
oh and can i just say how frustrating HR departments are. i applied for a job a few weeks ago that i really was interested it. last week i decided to be pro-active about it and actually call them and ask for an interview (this took about 2 hours of mental preparation on my part). well i call, actually get ahold of someone, and they told me they haven't even started looking at resumes! why post a job if you aren't going to do anything about it for weeks!
(or they were just lying and that was a nice way of saying you suck and we don't want you, but i doubt it)

happy birthday dad!
today's the 59th birthday of the greatest man ever, my dad!
i really can't even put into words how great of a person he is. he always been there, always made sure we were provided for, always supported whatever i wanted to do.
he's work hard his entire life, and now that he is hitting senior citizen status, i hope he slows down a little.
i wish i was in lubbock to see him on this fine day, but he promised me he would come up soon, so i'll have to celebrate his birthday then.

new york city for the weekend
late last week eric and i decided to head to nyc for the weekend. it's a $20 roundtrip bus ride, takes about 2 hours, and i had friends we could stay with.
unfortunately it rained all of friday, and most of saturday.
and because of the rain, i really didn't take many photos. friday we walked around and did some shopping then went to a nice dinner. after that we met up with rachele, my bff from junior high, and headed out to brooklyn to hang out with trevor, a friend from high school, and nick, another friend from high school. we ended up staying with nick the entire weekend which was awesome of him. THANK YOU nick for letting us stay at your apartment!
saturday morning we woke up and starting walking. sometimes i prefer to just walk instead of the hassle of public transportation. i like being able to really see neighborhoods and to be able to stop and take pictures.
along the way we saw tex-mexican food and chinese food, all in one.
also saw this cat, who was enjoying life.
we walked through prospect park and walked through park slope to breakfast. i really liked brooklyn and i want to spend more time there next time we go up.
after breakfast we decided to walk across the brooklyn bridge into manhattan.
you can definitely see all the rain clouds in those photos.
after some more walking we went to this bar i had been to previously. the entire bar looks like your grandmother's house. wood paneling, plastic covered couches, terrible paintings, etc.
sunday morning we headed back into manhattan to eat lunch before we left. we decided on curly's vegetarian, and omg this place is so good!
it was so cute and tiny, probably no more than 10 tables inside the restaurant.
after lunch we tried to do some shopping but eric and i didn't find anything we liked. oh well.
all in all our trip was great. i am happy that i live close to some of my really good friends and can really see them anytime i want. eric and i were exhausted last night when we made it home.

homemade pita bread
i will never again buy store bought pita bread. it never tastes that great, and i find the pita always falling apart.
well this recipe is incredibly easy and makes great tasting pita.
and it didn't fall apartment when i stuffed it full of tabouli.
pita bread
makes 8
1 cup warm water
2 teaspoons yeast
2 1/2 cups flour (i used 2 cups all purpose and 1/2 cup whole wheat)
2 teaspoons salt
1 teaspoon olive oil
mix the water and yeast together and let sit for about 5 minutes.
add the flour, salt and oil and stir till a shaggy dough is formed.
sprinkle flour on your work surface and turn out the dough.
knead the dough until it becomes smooth and elastic, about 5-10 minutes.
place the dough in an oiled bowl and cover with plastic wrap or a clean towel.
allow the dough to rest for 1-2 hours, until it has doubled in size.
preheat oven to 400 degrees and place your baking sheet in the middle rack.
gently defleat the dough and turn it out on a floured surface.
divide the dough into 8 equal pieces.
using a rolling pin, roll the pieces into 8 inch wide circles and about a quarter inch thick. don't be scared to make them too thin, the thinner pieces worked so much better than the thicker ones.
place the rolled-out pitas directly onto the baking sheet, fitting as many as possible without overlap.
the pita will start to puff up and when it is fully puffed it should be finished. this took approximately 3-5 minutes, i just sat there and watched the pitas in the oven.

bits of the weekend
um..whoops. i totally forgot to post some photos of the weekend. being unemployed totally throws off the days of the week, and then throw in a holiday weekend and i get all sorts of confused.
i really don't have much to show though. philadelphia had some amazing weather last week and over the weekend and we took full advantage of it.
eric left work early on friday and we rode our bikes into center city for some lunch. after lunch we went to rittenhouse square.
we did some people watching and some reading.
and then met up with eric's cousins. emily brought her dog samson (or sansom?) and i was pretty much in love.
we all went out to dinner and eric and i kept it classy by bringing a 32 oz. yeungling and drinking it out of wine glasses.
saturday morning we woke up and decided to get in a good workout. we biked over to the art museum and i locked up my bike and went for a run, while eric continued to ride his bike. it's really pretty over there, and i really wish i could have taken some photos, but bringing my camera along for a run just didn't seem like a good idea.
later on in the day we made potato pizza which was amazing.
sunday morning we woke up early again, and headed to the italian market. since moving up here i have missed having my favorite drink ever, topo chico. we thought the italian market would be our best bet in finding it because there are a lot of mexican grocers there. no such luck.
i decided to try jarritos agua mineral but it did not live up to the amazingness of topo chico.
later on some of our friends invited us on a bike ride. i really wish i had had my camera on me for this, because it was really beautiful. we stopped for a bit and i shot some photos with my phone.
we went all around fairmount park and it was great because you don't feel like you are in a city at all. and the leaves are barely starting to change, which is something i've never really seen.
and then finally monday. we decided to ride our bikes to memphis taproom to see juli and to drink some of the beer. over the weekend memphis had hosted a mystery beer competition, and they still had some pretty amazing stuff on tap.
i think this order was poor richard's tavern spruce ale, cantillon geuze and aecht schlenkeria helles.
