Vegan Treats = Food Pron.

So I have the phone number of delivery guys for Vegan Treats (aka bad news). I'm not usually around for a pick up, but I was able to the other day. There was also a birthday so I figured what the heck. Any-who, do I really need a reason to buy desserts from Vegan Treats??!? The answer is no! So after almost a week we finished off the last of the treats tonight.

Verdict from this bounty = love the glazed sprinkle donuts, love the sticky buns with caramelized pecans, and of course the classic cinnamon buns. I'm glad we got them and I'm glad they're gone since its hard just to have one bite. Anyways on to the pron, enjoy.

happy birthday to me!

my birthday was yesterday, but that didn't stop us from actually celebrating over the entire weekend! i have SO many photos, so i am going to break it up in to different parts and make a few posts over the next few days.
saturday eric and i woke up and slowly got ready for our adventure of the day! i really wanted to go to vegan treats to get some things for my birthday, and it's about an hour and a half away.
we stopped by the post office on our way out of philly and i picked up a package from my mom that contained birthday goodies.

it's slightly overwhelming. you mean i can eat ANY of these amazing looking desserts?! i ended up deciding on donuts, brownies and a sticky bun. but eric is a sneaky one and had actually pre-ordered me a german chocolate cake!! my favorite. it was really awesome of him!

photos from the weekend

so you might have heard we got some snow in the northeast over the weekend...

all of those photos were taken early in the day, when there were only a few inches. we ended up getting around 23 inches at our apartment.

we had planned a few weeks ago to have a christmas party on saturday night. once the snow started we figured no one would actually show up, but we continued on with our idea by baking and decorating all day.

i finally finished the wreath!

peppermint chocolate dipped sugar cookies
this idea was from real simple. i made the sugar cookie recipe from vegan cookies take over the world, then i sliced the dough into rectangles. once they baked and cooled i dipped the ends into melted chocolate, then sprinkled with crushed peppermint candy.

this was another real simple idea. i melted 12 oz. of chocolate and poured it in a 9"x13" cookie sheet and sprinkled with mixed nuts. then refrigerated for an hour, until hard.

we had four people make it to our christmas party! four! ha. we plan to have a another party when there isn't 2 feet of snow on the ground.

eats

i'm sad that vegan mofo is almost over, even though i didn't post vegan stuff every day, it was fun, and made me blog a lot more.
but here are some random things eric and i have been consuming.

salad
salads. lots of salads. we actually ate all of our produce in three days, produce that normally takes us seven days to finish.
and i was excited to see that whole foods had single beets you could buy. i don't think i had ever had a beet until eric and i went to san francisco last december. but beets were on everything! when they arrived on my first salad i just pushed them aside and pretended they didn't exist. the second time beets arrived on my plate i decided to try them, and really liked them. i haven't tried them cooked, just been eating them raw.

i have a dark chocolate problem. i usually buy a few bars and my favorite has always been green and black's dark chocolate. i bought a bar last week, and just as i was about to open it up, something on the ingredients caught my eye. milk powder was now listed there. my heart broke a little. about further investigation it seems like they now list milk powder as an ingredient for allergy reasons from cross contamination from the production line.
i decided to start trying out new dark chocolates and chocolove was my first. it was pretty good and i definitely plan on buying another in the future.

the other night we made eggplant fries. eggplant is a vegetable that i really wish i liked. i try to, but just can't seem to like it unless it's fried.

so while this is not the healthiest way to eat eggplant, it is delicious.

and finally, the dessert of the week! this week i made pumpkin chocolate chip brownie cake from have cake will travel. i don't know what it is about pumpkin desserts, but i am never sure if i like them/if they turned out alright until my second or so piece. so while i had my doubts about this dessert, i can now safely say it is delicious and almost gone.

dessert of the week

we finally made it through the ice cream cake. and we are almost finished with the red velvet cupcakes. but i figured it was time for a new dessert.
i went back to an old favorite, carrot oatmeal cookies, from 101 Cookbooks .

these are great cookies to make for vegans because they are already egg-free. and there is no processed sugar. and they have carrots in them!

and they are easy to change/modify. the first time i made them i used almonds instead of walnuts and topped them with coconut. this time i added some sunflower seeds.

cinnamon-walnut coffee cake

this coffee cake is good. real good.
so good, that this is the first dessert i have ever seen eric actively eat. and eat. and eat. i even caught him cutting off a large slice at 6:30 am tuesday morning.

well my mom wanted the recipe, and rachel wanted me to start posting recipes, so here goes!

cinnamon-walnut coffee cake from la dolce vegan

topping:

1/2 cup sugar
1 tsp ground cinnamon
2 tbsp vegan margarine
3/4 cup walnuts, chopped

cake:
1 1/2 cups flour
1/2 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup faux sour cream (i used tofutti better than sour cream)
1/3 cup oil
1/2 cup soy milk (i used almond milk)
1 tsp vanilla extract

preheat over to 350 degrees. lightly oil an 8x8 inch baking pan and set aside. in a small bowl, stir together topping ingredients and set aside. in a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt. stir in the "sour cream", oil, "milk, and vanilla. pour evenly into baking pan then sprinkle topping evenly over the top. bake for 30-35 minutes.
